Picture trying to dissolve a block of butter in water. It won't work — oil and water don't mix. Your digestive system faces the same problem with fats from food.
Stomach acid breaks down proteins brilliantly, but it's useless against fats. Worse still, that acid creates the wrong conditions for fat-digesting enzymes. This is where bile comes to the rescue.

Trap: Many students think bile is an enzyme. It's not — bile doesn't break down fats directly. It prepares fats so that lipase enzymes can work effectively.
Bile has a specific route through your body. The liver produces bile continuously — about 500ml per day. When you're not eating, this bile gets stored in a small pouch called the gall bladder.
When fatty food enters your small intestine, hormones signal the gall bladder to contract. Bile squirts through the bile duct into the duodenum (first part of the small intestine). This happens within minutes of eating.
Food leaving your stomach is highly acidic (pH around 2). This acid would damage your small intestine and stop fat-digesting enzymes from working. Lipase enzymes need alkaline conditions (pH 8-9) to function properly.
Bile is alkaline (pH around 8.5) because it contains sodium hydrogencarbonate. When acidic food meets alkaline bile, they neutralise each other. The pH rises to around 8 — perfect for lipase activity.
Even with the right pH, lipase still can't digest large fat globules effectively. Think of trying to paint a football versus painting 100 ping-pong balls — same total volume, but the ping-pong balls have much more surface area.
